5 Ways to Enjoy Green Peas
Green peas are a sure sign of spring. Enjoy them fresh or also frozen (since frozen peas have very similar levels of nutrition to fresh). Peas are low in calories and a good source of fibre and other nutrients. Green peas are a rich source of many minerals such as calcium, iron, copper, zinc, and manganese, 45% of the DV in vitamin K for blood coagulation, and nearly a quarter of what’s needed daily in thiamin and vitamin A!
Here are 5 ways to enjoy green peas:
Pasta
Toss in a couple of servings of frozen or fresh peas in the final minute or two when boiling pasta. Peas add a fresh burst of flavour to many pasta dishes, and using this method you don’t even have to clean an extra pot.
Soup
Simmer peas in water with a pinch of salt for about 10 minutes. Then puree with an immersion blender, and stir in milk or cream. Sprinkle with salt and pepper, and freshly shaved parmesan cheese (if desired)
Side Dish
Tossing peas with a drizzle of olive oil, fresh lemon zest and minced fresh mint is a fast and yummy side dish. Perfect for salads and appetizers.
On Toast
Beyond avocado toast, try peas! Mash up cooked peas with some minced garlic, salt, a drizzle of oil, and some lemon juice. Spread on toast and add fresh ground pepper.
Stir Fry
Toss in frozen or fresh green peas with your next stir fry, they cook up quickly, and add flavour and colour to a stir fry. Here’s one of our favourite pea stir fry recipes from June Darville here.
